
... so we use this in place of the Lentils
Ingredients
- 2 cups green lentils, sprouted or soaked overnight
- 4 large carrots, diced
- 1 large onion or shallots, diced
- 1 large white radish (looks like a big white carrot) or a couple potatoes.
- 1 cup cooked sausage, diced ham or bacon (Or whatever meat you want really. We had a few Chedder Buffalo Sausages that we got from the Farmer's Market, so I used two of those diced up!)
- 4-6 cups chicken stock or water
- bay leaves
- 15 oz crushed tomatoes or 4 fresh diced tomatoes
- sea salt and plenty of black pepper to taste
- Minced fresh garlic, about 4 cloves, or garlic salt to taste
- 1/4 tsp crushed red pepper flakes
- NEW! try this with a little cream! about 3-4 oz thick creme. Add at the very end when it is all finished cooking if you want.
Directions
- Start with the 6 cups water or chicken stock, or half or each is fine too. Add the 2 cups of lentils or bean mix to the water/stock, garlic, salt, black pepper, bay leaves, and whatever other spices you like and let it cook on high in the slow cooker for about 1 1/2 to 2 hours.
- Combine all the rest of the ingredients, carrots, shallots/onions, potatoes/white radish to the crockpot EXCEPT crushed tomatoes and the meat. Cook on high another four hours or until lentils are tender.
- Add the crushed tomatoes and meat, more salt and plenty of black pepper to taste if needed. Cook an additional 30 minutes or up to two hours.
- When it seems done, add the cream if you want or serve over rice or quinoa, or as it is.
